Cheesy Egg Casserole

  • 1/4 tsp. salt
  • 1/4 cup butter, melted
  • 4 eggs, beaten
  • 1 cup farmer's cheese or dry curd cottage cheese
  • 4 oz. chopped green chilies
  • 1 (4-oz.) jar pimientos
  • 2 cups shredded Monterey jack cheese
  • green pepper

Combine salt, and butter in large bowl. Add eggs, farmer's cheese, chilies, pimiento and cheese; mix well. Pour mixture into a lightly greased 10x6x2 in. baking dish. Garnish casserole with green pepper. Bake, uncovered, at 375 F (200 C) for 30 minutes.
