Bacon Cheddar Ranch Pasta Salad

This ranch pasta salad with cheddar and bacon is the ultimate summer side dish—creamy, flavorful, and perfect for cookouts, grad parties, or backyard hangouts. What makes it stand out? Rich, tangy sour cream and bold sharp cheddar from Westby Creamery to add that unmistakable fresh, homemade taste!
Tossed with crispy bacon bits, fresh dill, crunchy veggies, and tender rotini, it delivers the perfect blend of textures and flavors. It comes together in just 15 minutes and tastes even better after chilling. Plus, it makes a generous batch—about 12 to 14 servings—so it’s ideal for sharing.
Ingredients:
- 12 oz rotini pasta
- 8 oz Westby Creamery sharp cheddar cheese (cubed)
- 1 packet of ranch seasoning (1 oz)
- ½ cup Westby Creamery sour cream
- ½ cup mayonnaise
- ½ cup milk
- 5 oz canned or frozen peas (thawed if using frozen)
- ½ cup shredded carrots
- ½ cup red onion (chopped)
- 3 oz bacon bits
- 2 tbsp fresh dill (chopped)
- 2 tsp garlic powder
Directions:
- Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente.
- While the pasta cooks, prepare the dressing. In a medium bowl, whisk together the sour cream, mayonnaise, milk, ranch seasoning, garlic powder, and chopped dill until smooth.
- Once the pasta is done, drain and rinse it under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cubed cheddar cheese, bacon bits, red onion, shredded carrots, and peas.
- Pour the dressing over the pasta mixture and stir until everything is evenly coated.
- Chill for 2 hours before serving and enjoy!
