Cottage Cheese Ice Cream: 2 Ways

If you haven’t jumped on the cottage cheese ice cream trend yet, consider this your invitation—and start with the best: Westby Creamery’s delicious, award-winning 4% small curd cottage cheese. It’s rich, creamy, delicious and blends beautifully into a smooth base for high-protein frozen treats.
We experimented with a couple of flavor combinations. The strawberry version turned out fantastic—fresh, slightly tangy, and just sweet enough. The mint chocolate chip? Not our favorite. But it’s all about finding the combo that works for you and what flavors you like best. We’re already dreaming up our next batch: maybe chocolate peanut butter, Oreo crumbles, or a blend of mixed berries.
Ingredients
Strawberry Flavor
- 1 cup Westby Creamery 4% small curd cottage cheese
- 1 cup chopped strawberries
- 2 tbsp granulated sugar
- 1–2 tbsp milk (adjust for consistency)
- 1 tsp vanilla extract
Mint Chocolate Chip Flavor
- 1 cup Westby Creamery 4% small curd cottage cheese
- ¼ tsp peppermint extract
- ⅓ cup mini chocolate chips
- ¼ cup honey
- 1–2 tbsp milk (adjust for consistency)
- ½ tsp vanilla extract
- 1-2 drops of green food coloring (optional)
Directions
1. Blend the Base
Add the cottage cheese to a blender or food processor and blend until completely smooth.
2. Prepare Flavor Mix-Ins
For Strawberry:
In a small saucepan, combine chopped strawberries and sugar. Simmer over medium heat for about 5 minutes, until the fruit softens and releases its juices. Remove from heat and let cool.
For Mint Chocolate Chip:
No prep needed for mix-ins—just gather the ingredients.
3. Combine and Adjust Consistency
Stir 1–2 tablespoons of milk into the blended cottage cheese to reach your desired consistency (use less for thick and creamy; more for a smoother texture).
4. Add Flavors

- For strawberry, mix in the cooled strawberry compote and vanilla extract.
- For mint chocolate chip, stir in peppermint extract, honey, vanilla extract, and mini chocolate chips.
5. Freeze
Transfer the mixture to a freezer-safe container with a lid. Freeze for 2–3 hours.
Important: Do not freeze longer than 4 hours, as it may become icy or separate when thawed.
6. Serve and Enjoy
Let sit at room temperature for a few minutes before scooping, if needed.
