Crispy Parmesan Chicken Nuggets

Eating well doesn’t have to be boring. Recreate a childhood favorite at home with these air-fried chicken nuggets that have roughly 108 grams of protein in total. (Yes, you read that right – 108 grams!) This batter contains Westby Creamery grated parmesan cheese to give it that extra crisp and flavor other nuggets are missing. Add in a serving of your favorite vegetable(s) and you have yourself a delicious and nutritious meal.
Ingredients:
- 4 tbsp Westby Creamery grated parmesan cheese
- 1 lb lean ground chicken (8% fat)
- 1 tsp baking soda
- 1 tsp baking powder
- 1/3 cup flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp Dijon mustard
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- 2 eggs
- 1-2 tbsp of pickle juice
Directions:
- With your hands, combine Dijon mustard, garlic powder, onion powder, paprika, salt, pepper and 2 tbsp of grated parmesan with the ground chicken.
- Form chicken mixture into the shape of chicken nuggets. (Depending how thick you want them, you should get about 15-20 nuggets with 1 lb of chicken.)
- Place the nuggets in the freezer for 30 minutes. In the meantime, beat together two eggs and pickle juice. In a separate bowl combine flour, baking soda, baking powder and 2 tbsp of grated parmesan.
- Once nuggets are solidified, take each one and dunk in the egg mixture then the dry mixture. Repeat until all are coated.
- Spray nuggets with cooking spray and air fry at 400 degrees for 15-18 minutes and flip the nuggets halfway through. (If you don’t have an air fryer, you can bake the nuggets at 400 for 20 minutes and broil for 2 minutes.)
