Everything Bagel Cucumber Salad

Working all day in this heat on the farm can take it right out of you. So here’s a refreshing garden salad – Everything Bagel Cucumber Salad – we’ve been enjoying as a light side to go with our supper’s lately! It’s a creamy, tangy, and crunchy salad that’s perfect for summer or any savory snack craving made with the rich country goodness of Westby Creamery sour cream. And for an extra twist on this summer side, make your cucumbers into zoodles instead of slices like I did.
Ingredients
- 3 cucumbers, thinly sliced (peeled and deseeded if desired)
- 1 teaspoon salt, plus more to taste
- ½ cup Westby Creamery sour cream
- 3 tablespoons everything bagel seasoning
- 2 teaspoons white vinegar
- ½ teaspoon black pepper, plus more to taste
- ½ cup thinly sliced red onion
- 1 tablespoon white sugar
Directions
- Place the sliced cucumbers in a colander and sprinkle with 1 teaspoon salt. Let them sit over a sink or bowl for 30–60 minutes to draw out excess moisture.
- After resting, rinse the cucumbers briefly and press gently to squeeze out moisture, or pat dry with paper towels.
- In a mixing bowl, stir together the sour cream, everything bagel seasoning, vinegar, sugar, and black pepper until well combined.
- Add the cucumbers and red onion to the dressing. Toss until evenly coated. Taste and adjust with additional salt and pepper as needed.
- Serve immediately, or refrigerate for at least 30 minutes to let the flavors meld.
Storage Tip: Store in an airtight container in the refrigerator for up to 5 days.
