EZ Healthy Spinach Artichoke Dip

This easy-to-make spinach artichoke dip is a healthier alternative to the traditional dip you would find at your local restaurant – but you won’t be able to taste the difference! With Westby Creamery’s award-winning 4% small curd cottage cheese and delicious grated parmesan, this appetizer is a must have at any social gathering.
Ingredients:
- 14 oz. can artichoke hearts – drained and chopped
- 5 oz. frozen spinach – thawed and drained
- 1 cup non-fat Greek yogurt
- 1 cup shredded mozzarella cheese
- ½ cup Westby 4% small curd cottage cheese
- ½ cup Westby grated parmesan cheese
- ½ tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
Directions:
- Preheat oven to 400 degrees.
- In a large mixing bowl, combine all ingredients.
- Place mixture in a medium-sized baking dish. (I used an 8 in. round pan for reference.)
- Top with extra mozzarella and parmesan as desired and bake for 22 minutes.
- Broil for 2-3 minutes to brown the top. Serve with pita chips, veggies, crackers, pretzels or whichever dip vessel you are feeling that day.
