EZ Healthy Spinach Artichoke Dip

This easy-to-make spinach artichoke dip is a healthier alternative to the traditional dip you would find at your local restaurant – but you won’t be able to taste the difference! With Westby Creamery’s award-winning 4% small curd cottage cheese and delicious grated parmesan, this appetizer is a must have at any social gathering.

Ingredients:

  • 14 oz. can artichoke hearts – drained and chopped
  • 5 oz. frozen spinach – thawed and drained
  • 1 cup non-fat Greek yogurt
  • 1 cup shredded mozzarella cheese
  • ½ cup Westby 4% small curd cottage cheese
  • ½ cup Westby grated parmesan cheese
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Directions:

  1. Preheat oven to 400 degrees.
  2. In a large mixing bowl, combine all ingredients.
  3. Place mixture in a medium-sized baking dish. (I used an 8 in. round pan for reference.)
  4. Top with extra mozzarella and parmesan as desired and bake for 22 minutes.
  5. Broil for 2-3 minutes to brown the top. Serve with pita chips, veggies, crackers, pretzels or whichever dip vessel you are feeling that day.
