Nacho Average Dip: Cottage Cheese Queso

If you’re reevaluating your habits in the New Year, or just looking for healthier alternatives – you’ve come to the right place! This cottage cheese queso dip combines the creamy goodness of Westby Creamery‘s 4% cottage cheese with melty pepper jack cheese to create a high-protein dip that’s as smooth as it is flavorful. Perfect for game days, gatherings, or cozy nights at home, this recipe is a crowd-pleaser with a healthier edge.
Ingredients:
- 16 oz container of Westby Creamery 4% cottage cheese
- 4 oz pepper jack cheese (hand shredded)
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp chili powder
- ½ tsp seasoning salt
- ½ tsp pepper
To garnish, top with chopped:
- Tomato
- Jalapeno
- Red onion
- Cilantro
Directions for stovetop:
- Blend cottage cheese until smooth, then stir in seasonings of choice. We listed what we used, but feel free to make it your own.
- Heat up a medium saucepan on low. While that’s heating up, shred your block of pepper jack cheese until you have about a cup of shredded cheese or 4 ounces. Hand shredding is important for a nice, melty cheese consistency.
- Add cottage cheese blend to pan. Slowly add in shredded cheese in small amounts until each addition is completely melted. (Pro tip: Make sure your pan remains on low heat and does not get too hot, otherwise the queso will start to separate.)
- Top with chopped tomato, jalapeno, onion, and cilantro and enjoy!
Directions for microwave:
- Blend cottage cheese and add to a microwave safe bowl.
- Stir in seasonings and shredded cheese and begin microwaving in 20-second increments while stirring in between. While this may seem tedious, this is to help prevent the mixture from overheating and separating.
- Top with chopped tomato, jalapeno, onion, and cilantro and enjoy!
