No Mayo Egg Salad

The whole world has gone cottage cheese crazy, and honestly, we’re here for it.
Simple swaps with cottage cheese can add more healthful nutrients to the foods we already love. This easy cottage cheese egg salad is a great example. It comes together with just a few ingredients and delivers plenty of creamy flavor.
Westby Creamery Cottage Cheese adds a smooth, rich texture while keeping the recipe light, simple and satisfying. Use Westby Creamery 2% or 4% Cottage Cheese, organic or conventional, depending on what you have on hand.
With hard-boiled eggs, a little paprika, and salt and pepper to taste, this recipe works well on sandwiches, crackers, lettuce wraps or as a protein-packed snack. It also makes a great side dish for summer cookouts, graduation parties and other gatherings where you want something easy to make and easy to serve.
Ingredients:
- 6 large hard-boiled eggs
- 1 cup Westby Creamery 2% or 4% cottage cheese (organic or conventional)
- Salt and pepper, to taste
- 1 tsp paprika (plus extra to garnish)
Directions:
- Mash the hard-boiled eggs, combine all ingredients in a medium-sized mixing bowl, and garnish with a sprinkle of paprika. That’s it!
Nutrition Note: This cottage cheese egg salad is a protein-packed option that can be served in a variety of ways. The full recipe includes about 62 grams of protein, with approximately 36 grams from the eggs and 26 grams from the organic 2% Westby Creamery cottage cheese.
