Ingredients needed to put together String Cheese-Stuffed Meatballs - milk, Westby grated parmesan, Westby string cheese, parsley, ground beef, pasta sauce, breadcrumbs, and an egg.

Ingredients:

  • ¼ whole milk
  • ¼ Italian breadcrumbs
  • 2 Westby Creamery string cheese sticks
  • 1 lb. ground beef
  • 1 tbsp minced garlic
  • 3 tbsp of chopped parsley (set aside 1 tbsp to garnish)
  • 1 large egg
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tbsp olive oil
  • 24 oz of pasta sauce of choice
  • Westby Creamery grated Parmesan cheese (to garnish)

Directions:

  1. In a small bowl, let the breadcrumbs soak in milk for 5 minutes.Close-up of a hand stuffing the meatballs with Westby Creamery string cheese.
  2. In a large bowl, add the breadcrumb mixture to the ground beef, garlic, parsley, egg and other seasonings.
  3. Combine with your hands. (Do not overmix or the meatballs will be tough.)
  4. Shape the meat mixture into eight equal portions and form each into a ball. Place a piece of string cheese in the center of each meatball, pinching the meat to fully encase the cheese. Repeat with the remaining portions.
  5. Heat olive oil in a large skillet over medium-high heat. When the oil is hot, brown the meatballs in batches, turning them to brown all sides. Move the browned meatballs to a plate and clean the skillet.
  6. Pour the pasta sauce into the skillet, then return the meatballs to the pan, stirring gently to coat them in the sauce.
  7. Cover the skillet and let the meatballs simmer on low heat until fully cooked, about 15-18 minutes.
  8. Sprinkle with Westby’s grated Parmesan cheese and chopped parsley.
