String Cheese-Stuffed Meatballs

This dish is as cozy as your favorite fall sweater! These cheesy-stuffed meatballs – crafted with fresh Westby Creamery string cheese and topped with grated Parmesan – are the ultimate comfort food to help warm you and your family up on chilly evenings. Plus, they make a crowd-pleasing appetizer for those game-day watch parties. Enjoy them over a plate of spaghetti noodles, stuffed into a sub or alongside some garlic bread. Whatever route you decide to go, these meaty, cheesy bites are sure to score big!
Ingredients:
- ¼ whole milk
- ¼ Italian breadcrumbs
- 2 Westby Creamery string cheese sticks
- 1 lb. ground beef
- 1 tbsp minced garlic
- 3 tbsp of chopped parsley (set aside 1 tbsp to garnish)
- 1 large egg
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tbsp olive oil
- 24 oz of pasta sauce of choice
- Westby Creamery grated Parmesan cheese (to garnish)
Directions:
- In a small bowl, let the breadcrumbs soak in milk for 5 minutes.
- In a large bowl, add the breadcrumb mixture to the ground beef, garlic, parsley, egg and other seasonings.
- Combine with your hands. (Do not overmix or the meatballs will be tough.)
- Shape the meat mixture into eight equal portions and form each into a ball. Place a piece of string cheese in the center of each meatball, pinching the meat to fully encase the cheese. Repeat with the remaining portions.
- Heat olive oil in a large skillet over medium-high heat. When the oil is hot, brown the meatballs in batches, turning them to brown all sides. Move the browned meatballs to a plate and clean the skillet.
- Pour the pasta sauce into the skillet, then return the meatballs to the pan, stirring gently to coat them in the sauce.
- Cover the skillet and let the meatballs simmer on low heat until fully cooked, about 15-18 minutes.
- Sprinkle with Westby’s grated Parmesan cheese and chopped parsley.
