Taco Dip With Cottage Cheese

This taco dip is a fan favorite that fits in at any gathering, from March Madness watch parties to Easter celebrations.
It offers a slightly healthier, protein-packed twist on the classic taco dip by using cottage cheese instead of cream cheese for the base. Even better, it comes together with minimal prep and hardly any dishes. Finished with shredded cheddar, diced tomatoes, green onion, and black olives, this easy appetizer blends quickly and is always guaranteed to be a hit.
Ingredients:
- 16 oz Westby Creamery cottage cheese (2% or 4%, conventional or organic will all work)
- 8 oz Westby Creamery sour cream
- 8 oz Westby Creamery medium cheddar cheese, shredded
- 1 beefsteak tomato, diced
- 1–2 stalks green onion, chopped
- 1 (2.25 oz) can sliced black olives, drained
- 1 packet taco seasoning
Directions:
- Add the cottage cheese, sour cream, and taco seasoning to a blender. Blend until the mixture is smooth and creamy.
- Pour the blended mixture into a 13 x 9 inch dish and spread it evenly across the bottom.
- Top with an even layer of shredded cheddar cheese. Then add the diced tomatoes, chopped green onion, and sliced black olives in layers.
- Refrigerate for 30 minutes before serving.
- Serve with tortilla chips or bell pepper slices. Enjoy!
