Blueberry Cottage Cheese Breakfast Bake

Welcome spring with the bright, fresh flavors of this Blueberry Cottage Cheese Breakfast Bake! It’s made with creamy Westby Creamery cottage cheese for a protein-packed start to your day, and is quick and easy to throw together. Bursting with sweet blueberries and warm cinnamon, it’s the perfect centerpiece for Easter brunch or a cozy morning treat on a rainy spring day. Serve it warm with a dollop of yogurt and a drizzle of honey for extra sweetness.
Ingredients:
- 1 cup Westby Creamery 4% cottage cheese
- 1 cup rolled oats
- 1 cup fresh or frozen blueberries
- 2 large eggs
- ¼ cup honey (or maple syrup)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
Directions:
- Preheat your oven to 350°F and grease an 8×8-inch baking dish.
- For a smooth texture, blend Westby Creamery cottage cheese, oats, eggs, honey or maple syrup, vanilla extract, baking powder, and cinnamon in a blender or food processor until creamy. For a chunkier texture, whisk all ingredients together in a bowl without blending. (We opted for the chunkier texture.)
- Fold in the blueberries, and pour the mixture into the prepared baking dish.
- Bake for 25–30 minutes, or until the top is set and golden brown.
Let it cool for 5 minutes before serving. Enjoy warm, as-is, or topped with yogurt, nuts, and/or extra honey.
