Chocolate-Covered Banana Cottage Cups

If your summer goals include finding a better-for-you dessert that still feels like a treat, this recipe is a fun one to keep on hand. These Chocolate-Covered Banana Cottage Cups make four servings and get their smooth, creamy texture from Westby Creamery cottage cheese. Each serving has approximately 13-15 grams of protein, depending on the cottage cheese variety used. Blended with banana, peanut butter, honey and vanilla, then finished with a rich chocolate shell, they’re just the right amount of sweet, satisfying and simple to make.
Ingredients:
- 16 oz Westby Creamery cottage cheese, any variety
- 2 bananas
- 2 tbsp peanut butter
- 1-2 tbsp honey, depending on your preferred sweetness
- 10 oz dark chocolate wafers
- A dash of vanilla extract
- Optional: flaky sea salt or a light sprinkle of salt
Directions:
- Add Westby Creamery cottage cheese, bananas, peanut butter, honey and vanilla to a blender. Blend until smooth.
- Distribute the blended mixture evenly between four coupe glasses or small bowls.
- Place in the freezer for 30 minutes.
- Before removing the mixture from the freezer, melt your dark chocolate wafers. Place them in a microwave-safe bowl and microwave in 15-second increments, stirring well in between, until smooth.
- Once the chocolate is melted, remove the glasses from the freezer. Pour an even layer of chocolate on top of each. If desired, add a light sprinkle of salt before placing them back in the freezer for 10 minutes, or until the chocolate is set.
- Serve and enjoy!
