Craving the flavors of fall with a creamy twist? This Pumpkin Pie Custard combines the warmth of pumpkin spice with the rich, creamy texture of Westby’s award-winning 4% cottage cheese. It’s a simple yet satisfying dessert that’s packed with protein and the cozy taste of pumpkin. Baked to perfection, this custard delivers a comforting twist on pumpkin pie. Top it all off with a dollop of whipped cream and enjoy!

Note: This recipe creates enough for two people to share its deliciousness.

Ingredients:

  • ¾ cup of 4% Westby cottage cheese
  • ¼ cup of pumpkin puree
  • 1-2 tsp of pumpkin spice
  • 1 large egg
  • Splash of vanilla extract
  • 2 tbsp of powdered sugar
  • Optional: Whip cream to garnish

Directions:

  1. Blend all ingredients together.
  2. Spray your 4-5 inch circle baking dish with non-stick spray and pour in pumpkin and cottage cheese mixture.
  3. Bake for 15 minutes at 350 degrees.
  4. Let set until cool and enjoy!
