It’s a simple yet satisfying dessert that’s packed with protein and the cozy taste of pumpkin. Baked to perfection, this custard delivers a comforting twist on pumpkin pie. Top it all off with a dollop of whipped cream and enjoy!
Note: This recipe creates enough for two people to share its deliciousness.
Ingredients:
- ¾ cup of 4% Westby cottage cheese
- ¼ cup of pumpkin puree
- 1-2 tsp of pumpkin spice
- 1 large egg
- Splash of vanilla extract
- 2 tbsp of powdered sugar
- Optional: Whip cream to garnish
Directions:
- Blend all ingredients together.
- Spray your 4-5 inch circle baking dish with non-stick spray and pour in pumpkin and cottage cheese mixture.
- Bake for 15 minutes at 350 degrees.
- Let set until cool and enjoy!
