Santa Cookies

It’s no secret that Santa loves cookies – especially these delights made with fresh Westby Creamery sour cream! Light and fluffy on the inside with just a little bit of a crunch on the outside, they are so perfectly delicious you may not want to share.
The sour cream adds in a little extra flavor while also creating soft cake-like texture that won’t dry out by the time Santa comes around. Plus, this recipe is simple enough to include your little ones in on all the baking fun.
Ingredients:
For the cookies:
- 1/3 cup Westby sweet cream butter
- ½ cup Westby sour cream
- 1 cup granulated sugar
- 1 egg
- 2 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
For the frosting:
- ½ cup Westby sweet cream butter
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2 tbsp milk
Pro tip: Let the cold ingredients sit out for 1 hr. or until room temperature is reached.
Directions:
- Preheat oven to 350 degrees and line two baking sheets with parchment paper.
- Mix flour, baking powder, baking soda and salt in a medium-sized bowl.
- In a separate bowl, cream the butter with an electric mixer then add in sugar. Mix on high until light and fluffy.
- Add in egg and vanilla and mix well. Then add sour cream and mix again until fully combined.
- Slowly add in the flour mixture from step 2 while mixing on low until combined.
- Scoop tablespoon-sized portions of dough and place on prepared baking sheets. Leave about two inches between each scoop. (For a more even surface for frosting later, use damp hands to slightly flatten each one.)
- Bake for about 12 minutes or until the bottom edge of the cookies start to turn golden brown.
- While the cookies are baking, cream ½ cup of butter and mix in two cups of powdered sugar.
- Then add in one tsp of vanilla and two tbsp of milk. Mix until smooth. (Add in food coloring here if desired.)
- Let the cookies sit for about 15 minutes after baking before frosting and enjoy!
