Cheesy Sweet Potato Boats

Creamy, savory, and simple enough for busy weeknights, these Cheesy Sweet Potato Boats are the kind of protein and fiber-filled recipe you’ll want to make a staple in your meal rotation.
Naturally sweet roasted sweet potatoes are filled with a warm, cheesy mixture made with Westby Creamery Cottage Cheese and Westby Creamery grated Parmesan for a rich, satisfying flavor. This recipe makes an easy dinner, side dish, or meal-prep option.
Ingredients:
- 2 medium sweet potatoes
- 1 cup 4% Westby Creamery Cottage Cheese, 2% will also work
- ¼ cup Westby Creamery grated Parmesan
- ¼ cup frozen spinach
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. Paprika
- ½ tbsp. olive oil
- Salt and pepper to taste
Directions:
- Preheat your oven to 400 degrees. Line a baking sheet with parchment paper and cut the sweet potatoes in half lengthwise. Drizzle a small amount of olive oil on the cut side of each sweet potato half, then lay them cut side down on the baking sheet. Bake for 30–35 minutes, or until fork tender.
- While the sweet potatoes bake, sauté the frozen spinach in a small saucepan with the onion powder, garlic powder, paprika, salt, and pepper. Cook until any visible water has evaporated. If needed, drain or gently squeeze out any excess moisture.
- In a medium bowl, mix together the cottage cheese, Parmesan, and sautéed spinach. The mixture should be creamy but not runny.
- Once the sweet potatoes are fork tender, remove them from the oven and carefully flip each half so they are cut side up. Use a fork to gently mash the inside of each sweet potato, being careful not to mash through the skin. Those are your boats!
- Place about ¼ of the cottage cheese mixture onto each sweet potato half. Bake for another 6–8 minutes, or until the mixture begins to melt and turn golden brown.
- Let cool for 5–10 minutes, then enjoy!

Each Cheesy Sweet Potato Boat has about 150 calories, 9g of protein, and 2-3g of fiber. For a heartier weeknight dinner, enjoy two boats for about 300 calories, 18-20g of protein, and around 5g of fiber.
