Easy Macro-Friendly Pumpkin Soup

Warm up on a cold day with this nourishing pumpkin cottage cheese soup made with Westby Creamery’s 2% cottage cheese. This simple, protein-packed recipe brings together hearty seasonal flavors and the handcrafted dairy goodness of Westby. With just a few basic ingredients and a short time on the stove, it comes together quickly and makes a satisfying dish for any chilly day.

Ingredients
- 1 can pumpkin puree (15oz)
- 2 cups Westby Creamery 2% cottage cheese
- 2 cups vegetable broth
- 1 tsp pumpkin pie spice
- Optional: roasted pepitas to garnish
Directions
- In a saucepan, combine pumpkin puree, pumpkin spice and vegetable broth.
- Heat until warmed through and add cottage cheese.
- Use an immersion blender or transfer to a blender to puree until smooth and creamy.
- Return to the saucepan (if transferred mixture to blender) and heat gently until desired temperature is reached.
- Tip: Do not heat too quickly or dairy may start to curdle. Keep it low and slow.
- Garnish with a pinch of pepitas, a swirl of blended cottage cheese and a dash of pumpkin pie spice and enjoy!
