Sharp Cheddar Broccoli Soup

This sharp cheddar broccoli soup recipe is the warmth and comfort you’re looking for once the temperature starts to drop and the leaves pile up outside. With three delicious Westby Creamery dairy products – sweet cream butter, sour cream and a block of sharp cheddar cheese – your tastebuds will be thanking you.

This recipe uses frozen broccoli over fresh to help soften the florets faster. If you would like to use fresh, you may need to increase the simmer time once it’s added into the soup.

Ingredients:

  • 4 cloves of garlic, minced
  • 1 medium yellow onion, diced
  • 1 ½ cups carrots, diced
  • 5 tbsp of Westby sweet cream butter
  • 1/3 cup all-purpose flour
  • 3 cups of chicken broth
  • 2 – 10 oz bags of frozen broccoli florets
  • 2 cups heavy cream
  • 1/3 cup Westby sour cream
  • 16 oz Westby sharp cheddar, shredded
  • 1 tsp Dijon mustard
  • 1 tsp hot sauce
  • Salt and pepper to taste

Directions:

  1. In a large pot, melt butter over low to medium heat.
  2. Add in diced onion, carrot, garlic and a pinch of salt and pepper to the pot and stir. Cover and cook for 8 minutes, stirring occasionally.
  3. While that cooks, shred your block of Westby sharp cheddar and set aside.
  4. Slowly mix in chicken stock and then add broccoli florets. Cover and simmer for 5 minutes.
  5. Combine heavy cream, sour cream, Dijon mustard, hot sauce and one ladle full of soup broth in a mixing bowl.
  6. Slowly whisk in mixture. Then remove pot from heat and stir in about ¾ of the shredded cheese from earlier leaving some behind to garnish.
  7. For a smoother texture, take 2-3 cups of soup to a blender until pureed and add back into the rest of the soup.
  8. Serve with some extra shredded cheese on top and enjoy!
