Sour Creamy Avocado Dressing

Are you looking for the perfect summer salad dressing? Look no further! This sour creamy avocado dressing – made with Westby Creamery sour cream – is both light and refreshing, and doesn’t require any heat to make. You will just need your blender and a short list of ingredients to have some fresh dressing prepped for the next week or so. Enjoy on a salad, as a dip, or as a spread on your sandwich or wrap!
Ingredients:
- 2 avocados
- ½ cup of Westby Creamery sour cream
- 1-2 garlic cloves (minced)
- About ¼ of a bunch of cilantro
- 1 green onion stalk (cut off bottom bulb and roots and discard*)
- 1 tsp of salt
- 2 tbsp of lime juice
- ½ cup of water to thin
*Pro tip: Place in shallow water to re-grow the stalk for later use.
Directions (Just one):
- Place all ingredients – minus water – into a blender. Begin blending and add in water as needed. Add more or less depending on how thick you prefer your dressing. If you plan on using it for salads, more water is ideal. However, it also makes for a delicious spread on sandwiches or wraps.
