Two-Ingredient Cottage Cheese Flatbread

Not a fan of cottage cheese on its own? No problem! You can still reap all its nutritional benefits with this cottage cheese flatbread recipe. It requires just one cup of award-winning Westby cottage cheese and two eggs, resulting in a nutritious, high-protein wrap or crust. With approximately 34 grams of protein and only 10 grams of carbs per serving, this flatbread is both delicious and healthy!
Ingredients:
For the cottage cheese flatbread:
- 1 cup Westby Creamery cottage cheese (we used 4%)
- 2 eggs
- 1 tsp of garlic powder (optional)
- 2 tsp of Italian seasoning (optional)
For the toppings:
- A beefsteak tomato
- 2-3 slices of deli turkey
- 3-4 slices of fresh mozzarella
- 1 tbsp of pesto
- 1 tbsp of balsamic glaze
- A handful of arugula
- Salt and pepper to taste
Note: You can adjust the toppings to your liking and enjoy as either a wrap or flatbread pizza.
Directions:
- Preheat oven to 350 degrees.
- In a food processor or blender, mix cottage cheese, eggs and seasonings. This should only take 15-20 seconds. Do not over blend.
- Line a baking sheet with parchment paper, pour mixture on top and let it spread out.
- Bake for 35 minutes and then allow to fully cool. This step is a must so that your wrap does not fall apart.
