This Brown Butter Sweet Potatoes recipe with Westby Creamery Salted Butter is made for sharing with loved ones this holiday season. Ingredients:

  • 3 lbs sweet potatoes (about 3 medium-sized potatoes)
  • 1/4 lb (1 stick) Westby Creamery Salted Butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tsp cayenne pepper
  • 1 tbsp rubbed sage
  • 1 tbsp oregano
  • 1 tsp thyme
  • ½ cup chopped walnuts
  • 2 tbsp olive oil

Directions:

  1. Preheat oven to 425°F. Wash and chop sweet potatoes into ½–¾-inch pieces. Place in a large bowl and toss with olive oil and all seasonings until evenly coated.
  2. Line a large baking sheet with aluminum foil and spread the potatoes in a single layer. Bake for 40–50 minutes, or until browned and tender.
  3. In a light-colored saucepan, melt Westby Creamery Salted Butter over medium heat, stirring frequently. Once the butter begins to bubble, add chopped walnuts and continue stirring until the mixture turns frothy and golden brown. Remove from heat.
  4. For a cleaner presentation, transfer roasted sweet potatoes to a deeper serving dish before drizzling with the warm brown butter and walnuts.
