Creamy Coleslaw With French Onion Dip

If you’re planning on celebrating St. Patrick’s Day with some corned beef – you must try it alongside this creamy coleslaw! It’s the perfect side to balance out the rich, salty goodness of corned beef. Made with Westby Creamery’s French onion dip, this creamy, tangy coleslaw adds a fresh crunch with crisp cabbage and shredded carrots. The secret? Westby’s sour cream-based French onion dip, which adds a delightful (and flavorful) touch to this classic dish. This slaw also makes a great partner for your Friday night fish fry.
For the best flavor, prepare this dish a day in advance and let it sit overnight.
Ingredients:
- ½ head of cabbage (about 5 cups)
- 1 cup of shredded carrots
- ½ cup mayonnaise
- ½ cup Westby Creamery French onion dip
- 2 tbsp of distilled vinegar
- 3 tbsp of granulated sugar
A pre-made coleslaw cabbage and carrot mix will also work if you do not wish to chop and shred your own.
Directions:
- Roughly chop cabbage and add to a medium bowl with shredded carrots.
- In a small bowl, mix together mayonnaise, Westby French onion dip, vinegar, and sugar.
- Add in dressing mixture to the cabbage and shredded carrots and mix until all pieces are coated.
- Cover and refrigerate for at least 3 hours. (Overnight is best.)
