Not Grandma’s Potato Salad (But She’ll Love It Too)

We all know that iconic potato salad—the one that’s been passed down from Grandma’s recipe box and shows up at every summer picnic. This French onion dip potato salad holds its own right next to it, with a modern twist that brings big flavor without losing that nostalgic charm.
Westby Creamery’s sour cream-based French onion dip adds a rich, savory depth that ties the whole dish together, enhancing the creamy texture and bringing a bold, satisfying flavor to every bite. It’s comfort food with a little extra flair—and yes, Grandma just might ask you for this recipe next.
Ingredients:
- 5 cups diced red potatoes
- 8 oz Westby Creamery French onion dip
- 4 oz plain Greek yogurt
- ⅛ cup of mayo
- 2 tbsp mustard
- Salt and pepper to taste
Optional add-ons:
- Splash of pickle juice
- Bacon bits- we used 6 strips of bacon
- Chives
Directions:
- Place potatoes in a large pot, fill with water and bring to a boil. Simmer for 8-12 minutes or until potatoes are easy to pierce with a fork.
- While the potatoes simmer, mix together Westby Creamery French onion dip, plain greek yogurt, mayo, mustard, and pickle juice, if using, in a small mixing bowl.
- Drain potatoes and let cool.
- Add in the French onion dip mixture, bacon bits and chives (if using) and season with salt and pepper to taste.
- Cover and set in the fridge for at least 2 hours or until ready to serve. (Pro tip: It gets even better as the flavors meld, so making it a day ahead is a great option.)
