Westby Creamery Selects Nordic Dairy Technology For Modernization Project
Westby Cooperative Creamery will be adopting Nordic Dairy Technology’s closed-vat system for cottage cheese making as part of its $14 million expansion project.

Westby Cooperative Creamery has selected Nordic Dairy Technology (NDT) as an equipment supplier for its $14 million modernization project. Based in Denmark, NDT has specialized in sustainable dairy production since the early 1990s. Today, more than 50 percent of the cottage cheese produced in Europe uses NDT’s enclosed-vat technology – an innovation the Creamery will adopt to increase capacity and throughput.

Since 1903, Westby Cooperative Creamery has been producing high-quality cultured dairy products guided by the principles of sustaining small family farms and creating award-winning dairy foods consumers can trust and enjoy. Today, the Creamery remains the only cottage cheese maker in the State of Wisconsin.

“Our current equipment is continuing to age so before it meets end-of-life, we want to modernize and, just as important, we want to meet customer demand for this dairy food,” JD Greenwalt, the Creamery’s CEO and president, said.

Key operational benefits of the new equipment include:

• Enclosed systems that automate ingredient handling and sanitation
• Advanced technology that enhances product safety through HEPA-filtered air environments
• Faster processing — reducing production time from 16 hours to 8
• Increased yield — producing 6-10% more cottage cheese from the same amount of milk

The Creamery is currently finalizing site plans within its existing downtown Westby, Wis. facility. Equipment from NDT is expected to arrive in the spring of 2026, with a planned go-live date in the fall.
