Simple Stuffed Mushrooms

Get ready to wow your guests this holiday season with this simple stuffed mushroom recipe. These bite-sized delights are stuffed generously with a cheesy, savory filling and make for a satisfying appetizer before the main dish. You’ll need less than 30 minutes in total and a few of Westby Creamery’s finest – cottage cheese, grated parmesan and sweet cream butter.
Ingredients:
- 8 oz fresh portabella mushrooms
- 1 tsp Westby sweet cream butter
- 2 cloves garlic (minced)
- ¼ cup Westby 2% cottage cheese (or whichever variety you prefer)
- 2 tbsp Westby parmesan cheese
- 2 tbsp seasoned breadcrumbs
- ½ tsp parsley (dried)
- Salt and pepper to taste
Directions:
- Preheat oven to 375 degrees.
- Wash mushrooms to remove any excess dirt and carefully remove the stems from the mushroom caps. Save the stems and finely chop them up.
- Over medium heat, melt the butter in a small pan. Add in chopped mushroom stems and garlic. Sprinkle salt and pepper to taste and sauté for 2-3 minutes.
- In a small bowl, mix together cottage cheese, parmesan, breadcrumbs, parsley and the stem and garlic mixture.
- Spray a baking sheet with non-stick cooking spray and begin stuffing the mushroom caps with the filling.
- Bake for 10-12 minutes or until the tops are a golden brown, sprinkle on parsley and voila!
