Protein Power Breakfast Pizza

Start your year and your mornings off strong with this quick, filling and nutritious breakfast pizza. By scrambling the eggs with Westby Creamery cottage cheese, you get a perfectly fluffy and cheesy base to hold in all your favorite toppings. This recipe can be customized to fit all taste buds. Not a fan of cheddar cheese? Swap it for some feta. Prefer zucchini over bell pepper? No problem. The power is in your hands.
Note: It may be titled “breakfast” pizza, but you can easily enjoy this for lunch or dinner as well.
Ingredients:
- 3 eggs | 18 g of protein
- ¼ cup Westby Creamery cottage cheese (any variety) | 5.5 g of protein
- ¼ cup Westby Creamery cheddar cheese (shredded) | 7 g of protein
- 1 large tortilla
- Any toppings you prefer, we used:
- 2 turkey sausage patties (chopped) | 10 g of protein
- Handful of spinach
- ½ tomato (diced)
- ½ bell pepper (diced)
- Green onion to garnish
Directions:
- In a small bowl, beat your eggs and cottage cheese together.
- Spray a round baking dish with non-stick spray and place your large tortilla on it. You’ll want the dish to be slightly smaller than your tortilla so that the tortilla makes an edge for your egg mixture stay inside.
- Pour egg mixture on top of tortilla and sprinkle on your cheese and other desired toppings.
- Bake at 375 for 15-20 minutes, or until the eggs are firm.
- Let cool for a few minutes before cutting into the pizza. Enjoy!
