Hearty Tuna Mac Salad

If you’re looking for a quick but hearty meal to whip up, add in this tuna mac salad to next week’s meal plan. It’s easily customizable – simply add in more chopped vegetables or replace a protein to better fit your taste. No matter what ingredients you choose, it’s all brought together by a nice, fresh dressing crafted with Westby Creamery sour cream. Enjoy as an entrée or serve alongside your next summer barbecue.
Ingredients:
- 8 oz elbow macaroni
- 10 oz canned tuna in water, drained
- 8 oz cubed ham
- 2 large stalks of celery, finely chopped
- 3 green onions, thinly sliced
- 5 oz canned sweet peas, drained
- ½ small red onion, diced
- 3 tbsp of fresh dill
- 2 tbsp of fresh parsley
- 2 tbsp Westby grated parmesan
- Salt and pepper to taste
Dressing:
- 2/3 cup Westby sour cream (conventional or organic)
- 1/3 cup mayonnaise
- 1 tbs fresh lemon juice
- 2 tsp Dijon mustard
- 2 tsp granulated sugar
- ¼ tsp celery seed
- ¼ tsp paprika
Directions:
- Cook macaroni al dente according to box instructions. Strain and run cold water over it until cool. (Pro tip: Chop your celery and herbs while you wait for your water to boil.)
- Mix dressing ingredients in a medium sized bowl.
- In a large mixing bowl, combine all other ingredients with just half of the dressing mixture.
- Once all combined, let sit in the fridge for 2-4 hours. Then mix in remaining dressing and serve.
