String Cheese Stuffed Manicotti

Who knew string cheese could be the star of your next dinner dish? We did! This string cheese stuffed manicotti recipe eliminates boiling noodles and spending time piping cheese. It’s a throw together, heat-and-serve kind of dinner that will have your friends and family fighting over the last noodle. We make ours with shredded rotisserie chicken, but a meat-free version will be just as tasty.

Ingredients: Ingredients for Westby Creamery string cheese stuffed manicotti

  • 1 package Westby Creamery string cheese
  • 2 to 3 tablespoons of Westby Creamery parmesan cheese
  • 8 oz box of manicotti noodles
  • 24 oz jar of marinara sauce (you’ll only use 3/4s of the jar)
  • 1 rotisserie chicken – shredded
  • 32 oz box chicken broth (you’ll use about half the box)
  • 8 oz bag of shredded mozzarella cheese (you’ll use about 3/4s of the bag)
  • Salt, pepper and Italian seasoning to taste
  • Westby Creamery cottage cheese to garnish

Directions:

  1. Preheat oven to 350 degrees.
  2. Slide Westby Creamery string cheese into the dry manicotti noodles and place in a 9 x 13 baking dish. One package of string cheese will fill approximately 12 noodles.
  3. Pour marinara over manicotti noodles. You’ll use about 3/4s of the jar.
  4. Pile shredded chicken on top of sauced noodles.
  5. Season dish with salt, pepper, Italian seasoning and about 2 to 3 tablespoons of Westby Creamery parmesan cheese.
  6. Pile shredded mozzarella on top of chicken. You’ll use about 3/4s of the bag.
  7. Pour chicken broth into baking dish until manicotti noodles areWestby Creamery string cheese stuffed manicotti half submerged in broth. Do not fully submerge dish in chicken broth. You’ll use approximately half a box of chicken broth.
  8. Place dish (uncovered) in oven for 45 minutes.
  9. Remove from oven and serve with a heaping tablespoon of Westby Creamery cottage cheese and greens of your choice. Pro tip: Ignore (don’t serve) the chicken broth that remains in the dish. It was there to soften the manicotti.
